For what would I be using big red mustard?

I think you are referring to red mustard greens, one of the varieties of mustard greens. They are used in Asian and southern U.S. cooking. I have attached a site below that provides additional information and several recipes. The leaves of mustard greens have a mustardy taste with a hint of radish, which is slightly bitter. Small, young leaves can be eaten raw in salads, larger outer leaves are usually cooked. They can be cooked on their own, with other leafy greens, with other vegetables and seasoned with any manner of seasonings or fresh herbs. They are an excellent source of vitamin A as well as other vitamins and minerals.
