I would like to know what herbs go well with vegetables and meats?

That is a wide open question. It is best answered by referring you to the Herb Directory on my web site www.yvonnetremblay.com It is from my book "Thyme in the Kitchen -- Cooking With Fresh Herbs" (available from Richters). This chart will give you a good overview, by herb, as to what meats or vegetables each goes well with. Another suggestion is to look for recipes containing a herb that you like or have eg. if you have sage you can make Veal Saltimbocca. If you like dill, try it with carrots or green beans, etc. You can subsitute about 3 times the amount of fresh herbs for dried in most recipes but add at the end of the cooking to keep its flavour.
