I just ordered "Thyme in the Kitchen" and can hardly wait to get it. I live in Ohio and have a nice herb garden encased in a low stone wall. I had open heart surgery a few years ago and am thankful for recipes using my herbs. Thank you so much for this book, which I know I will enjoy and use a lot. Are there any herbs that specifically benefit those of us with crummy arteries/heart disease? Love to know.

While I do not make recommendations as to the medicinal use of herbs as I feel that not enough research has been done (as well as not my area of expertise), cooking with fresh herbs does do a lot to enhance the flavour of healthy foods such as whole grains, legumes, vegetables, fish, etc. and thereby promotes healthier eating. The best way to fight heart related illness is to achieve and maintain a healthy body weight (through healthy eating and exercise), to reduce overall fat intake, saturated fat intake and to increase plant antioxidants. Studies have shown that the negative effects on arteries can be reversed. Herbs certainly do a lot to add unique pleasures to eating.
